Asian Kabocha Cake

Cake made with rice is a sweet, sticky, glutinous dessert, very popular during the Chinese New Year!

  • Yields: 4-6 Servings


1Preheat the oven to 350 degrees.

2Microwave the squash on a plate, cut side down for 10-15 minutes, until very soft. When cool enough to handle, scoop out the flesh and save ½ cup. The rest of the squash can be snacked on later with a little salt.

3Mix in the ½ cup of squash with the remaining ingredients until well combined. Spray a muffin pan with baking spray and spoon in the batter.

4Bake 25-30 minutes, until a toothpick comes out clean, and let cool completely before removing from tin.


1/2 orange Kabocha squash, seeded

8 oz. glutinous rice flour (found at Asian markets)

1/4 cup neutral oil, like vegetable or canola

1 cup milk

1/2 cup brown sugar

1/2 cup white sugar

1 large egg
